Slimming World crustless quiche

My mum passed on this recipe, having had it passed to her from a lady at work who was doing Slimming World. My mum said how lovely it was, and as I am always on the look out for healthy meals I thought we’d give it a try too.

We now make this quite often as it is great as a light lunch with salad or with rice / chips / veg for a evening meal.

  • 3 eggs
  • 150g fat free natural cottage cheese

and any of the following veg or whatever you have in / leftover from other meals:

  • Peppers
  • Onions
  • Carrots
  • Courgettes
  • Aubergine
  • Mushrooms
  • Baby sweetcorn
  • Asparagus
  • Mushrooms
  • Tomatoes

You could also add a handful of chopped cooked bacon, ham or chicken.

Crustless Quiche Recipe


1.Chop all your veg up into fairly small pieces. If you are doing Slimming World use whatever super free veg you like. You can dry-fry them if you like them soft or leave them raw for extra crunch. I like to fry mine off a bit.

2. Mix together the eggs and 150g fat-free natural cottage cheese – season with salt and pepper if you like.

3. Lay the  vegetables out in an oven-proof  dish then pour the eggy mix over.

4. Pop in the oven at 190ºC/170ºC Fan/Gas 5 for about half an hour, or until the quiche is set and golden brown.


I had mine with cous cous, but I know a lot of people doing the diet properly like it with Slimming World chips or salad!
